Coronation Turkey

Serves: 3 - 4 as a topping on a warm jacket potato or more as a cracker spread or dip.

Ingredients

  • 6 tbsp of mayonnaise

  • 3 tbsp of Greek yogurt

  • 2-3 tsp mild curry power

  • ½ tsp ground cinnamon

  • half a handful of sultanas

  • 4 finely chopped dried apricots

  • 500g of diced cooked leftover turkey meat is good for this but given everything will be coated in sauce; you can use any part of the left over bird

  • a large pinch of fresh coriander, finely chopped

  • salt and pepper to taste

Eat straight away, or store in the fridge as a go-to snack, dip or topping throughout the Christmas festivities.

Preparation

  1. In a medium size bowl, mix the mayonnaise, the Greek yogurt and stir well. Next, add the cinnamon, the curry powder, the apricots and sultanas. The apricots and sultanas can be added to taste - as much as you like them, they do add some sweetness. A good coronation chicken has a good balance of spice and sweetness, so keep tasting as you make this up.

  2. Next, after giving everything a good stir, add the leftover turkey and fold the mixture through. Finally sprinkle and stir the coriander through when you are ready to serve.

Assembly

  1. Serve on crackers, a jacket potato or as a dip.
