Turkey Fajitas

Ingredients
1 tsp of vegetable oil
2 spring onions, finely sliced
1 onion sliced
1 red pepper, finely sliced
2 tsp ground cumin
2 tsp smoked paprika
250g left over shredded turkey breast meat
salt and pepper to season
4 wraps
To serve:
roughly chopped coriander
1 lime cut in quarters
soured cream
grated cheddar cheese
Top Tip
If you like it a little spicier add some extra spice, jalapeno peppers, or a dollop of hot salsa. Also makes a great topping for loaded fries or nachos.
Preparation
Heat the oil in a frying pan over a medium heat and stir fry the spring onions, sliced onion, and pepper for 1 minute until just soft.
Add the ground cumin and smoked paprika, season with salt and pepper and stir fry for another minute. Stir in the shredded turkey breast meat, then cook for 3–4 minutes, until the turkey is coated and heated through.
Assembly
Heat the wraps according to packet instructions and place a wrap on each plate. Top with the turkey and vegetable mix, scatter the coriander over the top and finish with a squeeze of lime.
Dollop the soured cream and sprinkle cheddar cheese on top. Roll up before eating.
