Turkey, Fig and Pear Salad
No Fuss
A perfect festive salad full of Christmas flavours - and ready in 10 minutes!

Ingredients
The Dressing
pinch of salt
2 tablespoons fresh lemon juice
½ teaspoon Dijon mustard
4 tablespoons olive oil - add a little liquid honey too if you like it sweeter
The Salad
2 romaine hearts
2 pears
4 figs
200g cooked turkey meat
100g of rocket
walnuts too, if you like
The Cheese
Go for as much or as little of whatever you like - Wensleydale with cranberries, or stilton, or Parmesan all work well. We used 75g.
Top Tip
You can make this in advance and it will sit nicely in the fridge for the next few days.
Preparation
Put all of the dressing ingredients in a jam jar and shake them together - or mix with a spoon at the bottom of a bowl.
Chop the romaine hearts into ribbons by cutting across the leaf and put them on top of the dressing at the bottom of the bowl. Add the rocket
Peel the pears and cut into long thin slices. Cut the figs in quarters. Tear the turkey into strips
Cut your chosen cheese into cubes (or shave some parmesan).
Assembly
When you are ready to eat, toss the leaves together in the dressing. Throw the pears and figs on top and add the turkey and cheese.
