Turkey Ramen

Transport your leftovers to create this Asian inspired dish.

Ingredients
1 tbsp oil
1 thinly sliced carrot
1 egg
2 garlic cloves, crushed
25g fresh root ginger, grated
1 tsp Chinese five spice
800ml turkey or chicken stock
3 tbsp soy sauce
2 servings of leftover cooked green veg
2 nests of medium noodles
salt and pepper to season
200g leftover cooked turkey breast (ideally sliced)
chopped coriander to serve
Top Tip
If you like it spicy add a few slices of red chilli rings on top to serve.
Preparation
Boil the egg in a pan of simmering water for 7-8 mins. Transfer to a bowl of cold water. Once cooled, peel away the shell and cut in half. Put aside ready for serving.
In the meantime, in a large frying pan, heat 1 tsp of oil on a medium heat and gently fry the garlic, ginger and five-spice for 2 mins until fragrant.
Stir in the stock and soy sauce and bring to a light simmer.
Add the thinly sliced carrot and left over green veg and cook for 2 mins.
Add the egg noodles and turkey and cook for 2-3 mins.
Season with salt and pepper.
Assembly
Divide between 2 bowls, add half of the cooked egg to each bowl and a sprinkling of roughly chopped coriander.
