Turkey Tacos

Hosting with the Mosting

A fantastic idea for a larger gathering offering spice, crunch and flavour.

Ingredients

The Mexican Seasoning

You can use a packet taco mix or make your own with this list below:

  • 2 tbsp cayenne pepper

  • 2 tbsp cumin

  • 2 tbsp garlic powder

  • 2 tbsp olive oil

  • 300 ml of water to mix them together

  • salt and pepper

The Taco Filling

  • 400gms of cooked turkey shredded

  • 2 little gem lettuces or iceberg lettuce, sliced cross ways for slithers of crunch

  • a handful of grated cheese

  • 2 small red onions finely chopped

  • 2 yellow or red peppers, deseeded and finely chopped

  • 8 small sundried tomatoes (optional, we liked them in there)

  • 3 tbsp guacamole or sliced avocado

  • 8 - 10 taco shells

  • 1 avocado, destoned and finely sliced

  • a handful of sweetcorn

  • sour cream mixed with a squeeze of fresh lime juice

  • a splash of olive oil


Top Tip

Why not increase the heat on this and add some jalapenos or extra spice, or simply use the filling for jacket potatoes instead of tacos.

Preparation

The Taco Mixture

  1. In a large bowl mix the mexican seasoning ingredients from above and add the water. Or if using the packet mix, do the same and continue below.

  2. Add the cooked turkey and use your hands to make sure the turkey is fully coated in the spices and becomes a marinade type mix.

  3. Next put some oil in a flat-bottomed pan, add the seasoning mix and turkey. You could add the red onion into this mix too, but we kept it simple and used only the turkey and seasoning for a warm turkey mix on the crunchy raw vegetables. Cook on a medium heat until the water in the seasoning reduces a little and bubbles in the pan for about 5 to 8 mins.

  4. Preheat the oven for the tacos at Gas Mark 6 / 200C / 400F. Place them on a baking sheet, open side down. They only need to cook for 2 - 3 mins.

Assembly

  1. When cool enough to touch place in a dish so that support each other, and fill each taco and start loading up the tacos. The slices of lettuce go at the bottom of the tacos, then the avocado or guacamole. It’s optional but you can add the sundried tomato at this stage. Sprinkle with the cooked sweetcorn and diced peppers.

  2. Then add a sprinkle of red onion, a spoonful of the sour cream with lime, and top with some cheese.
